The necessary conditions for a successful yellowing and ripening process are:

  • Temperature (For yellowing: 20- 28 °C, 14 -20 °C for ripening)
  • Relative humidity (85% -95%)
  • Ethylene gas (For Yellowing: 3-10ppm, 100-1000ppm for Ripening)
  • Air movement (to circulate the room volume 25 -30 times in 1 hour)
  • Time (Painting and Ripening time 48 -96 h)

After the ethylene application, the door of the room is kept closed for 24 hours. After this period, the room should be ventilated. Depending on the type and variety, the products mature within 2-4 days, reach the eating condition and turn yellow.

If the yellowing room is properly insulated, 100 -150 ppm of ethylene is sufficient for 24 hours for banana ripening. In order for a homogeneous yellowing and ripening process to take place, it is necessary to ventilate the room after 24 hours. If ventilation is not done, the CO2 resulting from the respiration of the products increases in the environment and this suppresses the ripening effect and prevents a homogeneous ripening. For this reason, it should be prevented that the CO2 concentration in the environment rises above 1%.
